  • 300 grams all-purpose flour

  • pinch of salt

  • 150 grams powdered sugar
  • 50 grams semolina
  • 150 grams milk
  • pinch of vanilla extract
  • zest of 1 lemon (or to taste)
  • 2 eggs (room temperature)
  • plum jam (for spreading on the dough)

Step-by-Step Instructions

1. Prepare the Poppy Seed Filling:
  1. In a small saucepan, simmer the semolina with milk until it thickens, stirring frequently to avoid lumps.
  2. Once thickened, remove from heat and stir in the ground poppy seeds. Allow this mixture to cool.
  3. Meanwhile, beat the eggs with the powdered sugar until pale and frothy. Add the vanilla extract and lemon zest.
  4. Gently fold the cooled poppy seed–semolina mixture into the beaten eggs and sugar. Set aside.

  1. In a large bowl, combine the flour with a pinch of salt.
  2. Add the softened fat and sour cream. Mix or knead until a smooth dough forms. If needed, add a little more flour or sour cream to get a workable consistency.
  3. Divide the dough into two equal portions.
3. Assemble the Squares:
  1. Preheat your oven to 180°C. Lightly grease or line a small baking pan with parchment paper.
  2. Roll out the first half of the dough to fit the bottom of your baking pan. Press it evenly into the pan.
