Lotus Rolls with Creamy Curd Magic

There is something wonderfully comforting about the aroma of freshly baked cinnamon rolls. These rolls, however, bring a delightful twist to the classic recipe. The soft and fluffy dough is filled with a rich mixture of Lotus Biscoff spread and chunky curd cheese, then topped with a creamy glaze of white chocolate and cream cheese. Perfect for breakfast, dessert, or a sweet snack with your favorite hot drink, these rolls are irresistible.

This recipe builds on the dough from my Chocolate Babka recipe with a slight modification to enhance the flavor with cinnamon.


Ingredients:

Dough:

  • 180 grams of all-purpose flour
  • ¼ cube of active yeast (or ⅓ packet of active dry yeast)
  • 80 milliliters of warm milk (not too hot)
  • 30 grams of granulated brown sugar
  • 1 medium egg (room temperature)
  • 30 grams of unsalted butter (melted)
  • ½ teaspoon of salt
  • 1 tablespoon of ground cinnamon

Filling:

  • 200 grams of Lotus Biscoff spread
  • 250 grams of chunky curd cheese
  • 3 tablespoons of powdered sugar

Topping:

  • 100 grams of white chocolate (melted)
  • 100 grams of cream cheese
  • 1 tablespoon of powdered sugar
  • Cinnamon to taste

Step-by-Step Instructions:

Prepare the Dough:

  1. Activate the Yeast:
    In a small bowl, mix the yeast with warm milk and a pinch of sugar. Let it sit for 5–10 minutes until frothy.
  2. Mix the Dough:
    In a large mixing bowl, combine the flour, brown sugar, salt, and cinnamon. Add the activated yeast mixture, egg, and melted butter. Stir until the dough starts to come together.
  3. Knead the Dough:
    Transfer the dough to a floured surface and knead it by hand for about 8 minutes, or use a stand mixer with a dough hook attachment to knead it instead.
  4. Let the Dough Rise:
    Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1–1.5 hours, or until it doubles in size.

Make the Filling:

In a medium bowl, mix the Lotus Biscoff spread, chunky curd cheese, and powdered sugar until well combined. Set aside.

Shape the Rolls:

  1. Once the dough has risen, punch it down and roll it out into a rectangle on a floured surface (about 1 cm thick).
  2. Spread the filling evenly across the dough.
  3. Using a sharp knife or a pastry cutter, slice the dough into 6–8 equal strips lengthwise. Take each strip and roll it tightly into a spiral, starting from one end.
  4. Place the rolls in a greased or parchment-lined baking dish, leaving some space between them to rise.

Bake the Rolls:

  1. Arrange the rolls in a greased or parchment-lined baking dish, leaving space between them to rise. Cover with a towel and let them rise for 30 minutes.
  2. Preheat the oven to 190°C and bake the rolls for 20–25 minutes, or until golden brown.

Prepare the Topping:

While the rolls cool slightly, whisk together the melted white chocolate, cream cheese, powdered sugar, and a pinch of cinnamon until smooth and creamy.

Finish and Serve:

Spread the topping generously over the warm rolls, allowing it to melt into the swirls. For a finishing touch, sprinkle a dash of cinnamon or crushed gingerbread over the top.
