Topping:

  • 1 tablespoon of brown sugar
  • 1 teaspoon of cinnamon

Instructions

1. Prepare the Cookie Crust:

  1. Preheat your oven to 160°C.
  2. Crush the cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
  3. Mix the cookie crumbs with the melted butter until the texture resembles wet sand.
  4. Press the mixture evenly into the bottom of a springform pan lined with parchment paper. Place in the fridge to chill while preparing the filling.

2. Prepare the Apple Layer:

  1. In a pan over medium heat, cook the diced apples with brown sugar and cinnamon until softened and caramelized.
  2. Add the cornstarch mixture and stir until thickened. Remove from heat and let cool.

3. Prepare the Cheesecake Filling:

  1. Combine the cottage cheese, sour cream, powdered sugar, egg, vanilla paste, and whipping cream in a large bowl.
  2. Using an immersion blender, blend the mixture until completely smooth.

4. Assemble the Cheesecake:

  1. Pour half of the cheesecake filling over the chilled cookie crust, spreading it evenly.
  2. Add the cooled caramelized apple layer, spreading it gently over the first cheesecake layer.
  3. Pour the remaining cheesecake filling on top and smooth the surface with a spatula.

5. Bake the Cheesecake:

  1. Place the cheesecake in the oven and bake at 160°C for 1 hour.
  2. After baking, turn off the oven, leave the door slightly opened, and let the cheesecake cool inside for at least 1 hour. This gradual cooling helps prevent cracks.
