Cookie Crust:
- 150 grams of your favorite cookies (I used my homemade gingerbread cookies)
- 70 grams of melted butter
Cottage Filling:
- 1 egg
- 2 packs (180–200 grams each) of cottage cheese
- 3 tablespoons of sour cream
- 5 tablespoons of powdered sugar
- 1 teaspoon of vanilla paste
- 100 grams of whipping cream
Apple Layer:
- 2 apples, diced
- 3 tablespoons of brown sugar
- 1 teaspoon of cinnamon
- 7 grams of cornstarch dissolved in 7 grams of water
Topping:
- 1 apple, diced
- 1 tablespoon of brown sugar
- 1 teaspoon of cinnamon
Instructions
1. Prepare the Cookie Crust:
- Preheat your oven to 160°C.
- Crush the cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
- Mix the cookie crumbs with the melted butter until the texture resembles wet sand.
- Press the mixture evenly into the bottom of a springform pan lined with parchment paper. Place in the fridge to chill while preparing the filling.
2. Prepare the Apple Layer:
- In a pan over medium heat, cook the diced apples with brown sugar and cinnamon until softened and caramelized.
- Add the cornstarch mixture and stir until thickened. Remove from heat and let cool.
3. Prepare the Cheesecake Filling:
- Combine the cottage cheese, sour cream, powdered sugar, egg, vanilla paste, and whipping cream in a large bowl.
- Using an immersion blender, blend the mixture until completely smooth.
4. Assemble the Cheesecake:
- Pour half of the cheesecake filling over the chilled cookie crust, spreading it evenly.
- Add the cooled caramelized apple layer, spreading it gently over the first cheesecake layer.
- Pour the remaining cheesecake filling on top and smooth the surface with a spatula.
5. Bake the Cheesecake:
- Place the cheesecake in the oven and bake at 160°C for 1 hour.
- After baking, turn off the oven, leave the door slightly opened, and let the cheesecake cool inside for at least 1 hour. This gradual cooling helps prevent cracks.
6. Prepare the Topping:
- In a pan over medium heat, cook the diced apple with brown sugar and cinnamon until golden and softened.
- Let the topping cool before decorating the cheesecake.
7. Final Touch:
Once the cheesecake has cooled completely, top it with the caramelized apple cubes. Refrigerate for at least 4 hours or overnight before serving.
